Cauli Flower Varutharacha Curry



Its winter time and the cauliflower is available in plenty. So many dishes, including snacks can be made out of this. So, why not a curry in a South Indian style to go with rotis and rice. This can be had even with idli, dosa, puttu or idiappam.

Basic info about the recipe
Cuisine                                                      - South Indian
Serves                                                       - 4- 5 people.
Ingredients
  1. Cauli flower                                           - 600-700 gms
  2. Dessicated coconut                               - 1 cup
  3. Shallots                                                 -10nos
  4. Garlic                                                     -4 nos
  5. Turmeric powder                                   - ½ tsp
  6. Kashmiri Red chilli powder                    - 1.5 tsp
  7. Coriander powder                                 - 2 tsp
  8. Chicken masala                                    - 1.5 tsp
  9. Salt                                                      - to taste
  10. Mustard seeds                                     - 1 tsp
  11. Oil                                                        - 2 tsp
  12.  Curry leaves                                       - 5-6 nos.
Method: Clean the cauli flower and separate it into small florets. Dip in boiling salt water for 5 minutes.
Cook the cauli flower florets adding turmeric and salt in a pan.
Heat another pan and add 5 shallots, garlic and dessicated coconut and fry till brown stirring continously.
To this add red chilli powder and coriander powder and fry for another 2 minutes.
Remove from gas and keep aside. Let it cool.
Grind this mixture to a fine paste adding water in between.
Transfer this mixture to the cooked cauli flower.
Add chicken masala and let everything cook together for 5-10minutes. Check salt at this stage.
Heat oil in a pan. Splutter mustard seeds. Add curry leaves and remaining sliced shallots and fry till golden brown.
Add to the curry and serve hot.
