Moru curry
Moru
curry is a traditional kerala Christian curry. No Christian feast is complete without
this curry. I learnt this recipe from my
neighbor who is also from Kerala.
Basic info about the recipe
Cuisine - South Indian
Serves - 2 people.
Ingredients:
1. Curd - 1.5 cups
2. Shallots - 5-6 nos
3. Garlic - 2 cloves
4. Ginger - ½ inch long

leaves - 5-6 nos

powder - ½ tsp
7. Red
chilli powder - ½-1 tsp
8. Roasted
fenugreek pwdr - a pinch
9. Roasted
cumin pwdr -¼ tsp

Salt -
to taste.

Coconut oil -
2 tsp.
Method: Beat the curd and keep aside.
Chop shallots, garlic and ginger .
Heat oil in a pan and add the chopped veggies
and curry leaves and fry till golden brown.
Add turmeric powder and red chilli powder and
stir well.
Switch off the gas. Let it cool.
Add the fried items to the curd.
Add cumin, fenugreek and salt and mix well.
Serve with rice.
Note: I like a medium thick consistency for
my curry. So, I did not heat the curd. Another variation to this curry is –
once the gas is switched off after frying, you can add curd and stir
continuously. This will make the curd release water and make the curry a thin
consistency. If this method is followed
add salt only after the curry is cooled.
Mustard seeds can be spluttered if so
desired.
