Coconut Rice Flakes

As we all know, lots of dishes can be made using rice flakes. Normally, we get white rice flakes in North india and brownish red in South India. This recipe can be made using both of them. It appears more attractive with South Indian rice flakes. It is simple and easy to make and can be served as an evening snack.

Basic info about the recipe
Cuisine                                             - South Indian             
Serves                                             - 2 people.

Ingredients:
1.   Rice flakes                 - 2 cups
2.   Grated Coconut         - half a coconut
3.   Sugar                          - 2 tbsp.

Method: transfer the rice flakes to a large bowl.

Drizzle some water onto it. Let it rest for 10 mts. This will make the rice flakes soft.  Instead of water you can add milk also.

Mix the grated coconut to the rice flakes and add sugar. Use your hand to mix it thoroughly.

Serve immediately.

Note: Sugar should be added only at the time of serving.

If you feel the rice flakes have gone dry after keeping for sometime, you can add 2-3 spoons of milk to make it soft.
