Amarakka Fry

Amarakka is also called broad beans. Broad beans is rich in fibre, nutrients, proteins and vitamins and has only low calorie count. It is prepared both in North and South India. This recipe provides a South Indian style of preparation.

Basic Info about the recipe
Cuisine                                           - South Indian
Serves                                            - 2 people.

Ingredients:
1.   Broad beans           - 250 gms
2.   Onion                       - 1 large
3.   Turmeric powder     - ½ tsp
4.   Red chilli powder    - 1 tsp
5.   Salt                           - to taste
6.   Coconut  oil             - 2 tsp
7.   Mustard seeds        - 1 tsp
8.   Curry leaves            - 8-9 nos

Method: Finely chop broad beans and onions.

Heat oil in a pan and splutter mustard seeds. Add curry leaves . Stir well.

Add onions and fry till golden brown. Add turmeric and red chilli powder and mix well.

Add beans and salt and stir. Close the lid of the pan and let it cook for 5-7 mts. Open the lid and stir in between as no water has been added.

Delicious amarakka fry is ready to be served with rice or chapathi.
