Vegetable Fried Rice




Vegetable Fried Rice

Fried Rice is loved by everyone.  No Chinese meal is complete without fried rice. It can be made with vegetables, chicken , egg or fish. Normal accompaniments are Manchurians, dry chilli dishes,  sauces etc.

Basic info about the recipe
Cuisine                                                      - Chinese
Serves                                                       - 2-3 people.

Ingredients:
1.   Basmati rice                          - 2 cups
2.   Carrot                                    - 1 large
3.   French beans                       - 7-8 nos
4.   Onion                                    - 1 medium
5.   Garlic                                     - 4 cloves
6.   Spring onion                         - 2 tbsp
7.   Salt                                        - to taste
8.   Oil                                          - 1 tbsp
9.   Butter                                     - ½ tsp
10.                       Pepper powder           - ½ tsp
11.                       Soya sauce                 - 1-1.5 tsp
12.                       Vinegar                        - 1 tsp

Method: Boil basmati rice adding salt and 1 tsp oil. Oil is added to avoid the rice being sticky.

Cook rice upto 80%. Strain and allow to cool.

Finely chop the veggies.

Heat oil and butter together in a pan and add garlic and onion and fry till transparent.

Add carrots, beans and spring onion and cook for 2 mts.

Add pepper powder, salt, soya sauce and vinegar and mix well.

Add the cooked rice and stir carefully.

Garnish with spring onion and serve hot.
