Potato Stew




Potato Stew

Stew is a traditional South Indian side dish. It is an integral part of every sadya served in Kerala. It can be served with rice, appam or idiappam. It is a mildly flavoured potato coconut milk curry.

Basic info about the recipe
Cuisine                                             - South Indian
Serves                                             - 4 people.

Ingredients:
1.   Potatoes                     - 4 nos
2.   Coconut milk              - 2 cups
3.   Onion                          - 1 large
4.   Ginger                        - 1 inch piece long
5.   Salt                             - to taste
6.   Curry leaves              - 6-7 nos
7.   Coconut oil                 - 2 tsp
8.   Green chillies             - 3 nos

Method:  Boil potatoes and mash them.

Slice onion. Slit green chillies. Chop ginger.

Boil onion, ginger and green chillies in 1 cup water.

Add potatoes to this and stir well.

Add coconut milk and salt and stir continuously.  If it has to be served as a curry, it should be of medium consistency. If to be served on banana leaf, thick consistency. Adjust water accordingly. 

Switch off the gas and drizzle oil and curry leaves and serve hot.

Note: To make a thick consistency, keep the gas in medium flame and stir continuously without taking hand. Otherwise there could be chances of coconut milk splitting.
