This is a traditional payasam of Kerala. It is mostly
prepared in temples as an offering to God.
Basic info about the recipe

Ingredients
- Raw rice - 1 cup
- Ghee - 2 tbsps
- Jaggery - 300 gms
- Thick coconut milk - 4 cups
- Coconut pieces - 1
tbsp
Method: Cook the
raw rice in a vessel or cooker. Add 1 tbsp ghee when cooked and mix well.
Slightly mash the cooked rice with a spoon.
Make a thick
jaggery water and filter it.
Heat a pan and add
the cooked rice and the jaggery to it and stir continuously till both gets
blend together.
Add the coconut
milk and mix well. Stir continuosly to a thick consistemcy.
Heat a tbsp of ghee
and add the thin sliced coconut pieces
ad fry till golden brown
Add to the payasam
and serve hot.
Notes: I have used
coconut milk powder to make thick coconut milk
You can use fresh
extracts also. In that case the thin milk should be added first and cooked and
the thick one should be added last.
