Mulakushyam is a very popular curry which is had with
rice in Kerala. It is considered to be a 5 minute curry. It is can be made with
any of these vegetable available in your fridge, like cabbage, raw banana, ash
gourd, snake gourd, lauki, potato, raw pappaya, palak, pumpkin, carrot, raw
mango and drumstick or even Kerala cucumber. Can you ever think of making a
curry with such a combination?

3-4 people.
Ingredients:
- Sambar (arhar) dal - 1 cup

Cabbage
(chopped) - ½ cup
- Tomato - 1 no:
- Green chillies - 2
nos
- Turmeric powder - ½ tsp
- Red chilli powder - ¼ tsp
- Salt - to taste
- Coconut oil -
2 tsp.
- Curry leaves -
6-7 nos.
Method: Transfer the chopped veggies and dal to a
pressure cooker. Add all the powders and green chillies. Mix well after adding
enough water.
Cook on high flame. Allow 2 whistles. Reduce the flame to
low and cook for another 3 mts.
Open the cooker. Transfer the curry to a bowl. Add
coconut oil and curry leaves and serve hot.
Notes: If the curry is too watery, open the cooker and
simmer for another 4-5 mts. The consistency of the curry is medium thick. It
will get thicker as it cools.
