Salads are no doubt refreshing. This high nutritious
super food not only fills your stomach but also makes your meal healthy. Making
a salad and a dressing for it all depends on your imagination and the
availability of the veggies in your hand.
Ingredients
- Broccoli - ½ a no:
- Tomato - 1 no:
- Cucumber - 2 nos
- Cheese slice - ½ a slice
- Green Capsicum - ½ a no:
- Sweet Corn - 75 gms
- Zucchini - 1 no:
For dressing:-
- Olive oil - 2
tsp
- Oregano - 1 tsp
- Red chilli flakes - ½ tsp
- Salt - to taste
- Vinegar - 1 tsp
Method: Cut the broccoli into small florets. Blanch them
in hot water for 5 minutes. Take out and dip in cold water for 2 minutes.
Transfer the broccoli to a pan and add half a spoon of
butter, oil or ghee.
Toss it for 3minutes and transfer to a bowl.
Microwave the frozen corn for 2mts.
Now add diced tomato, cucumber, cheese slice, corn,
zuccini and capsicum to the salad bowl and mix well.
Keep in refrigerator for sometime.
Make a dressing with the ingredients mentioned above and
pour over the salad at the time of serving. Mix well.
Notes: You can avoid cheese slice to make it more
healthier
You can add lettuce depending on the availability
Instead of vinegar you can add lemon juice
Instead of red chilli flakes, pepper can be used.
You can give a twist to this salad by adding apple pieces
to it.
