Avial




Avial
 Avial is a very common dish prepared in Kerala. This is usually made with a variety of vegetables that differs from one district to the other. It’s one of the  main dishes  prepared during festivals  marriages, birthdays and other
Occasions.

Basic info about the recipe
Cuisine                                                               - South Indian
Serves                                                               - 4 people.

Ingredients
1.   Assorted vegetables                    - 3 cups
(ash gourd,white pumpkin, yam, raw banana, drumstick, carrots, beans , long beans, kundru(kovakka) etc cut into 1 inch long pieces)
2.   Grated coconut                             - ½ a coconut
3.   Curd                                               - 2tbsp
4.   Salt                                                 - to taste
5.   Green chillies                                - 2-3 nos
6.   Shallots                                          - 5 nos
7.   Cumin seeds                                 - 1 tsp
8.   Coconut oil                                    - 2 tsp.
9.   Turmeric powder                           - 1 tsp
10.           Curry leaves                             - 6 nos

Method: Cut the veggies into 1 inch long pieces.

Boil the veggies  in a pan adding water, turmeric powder and salt.

Grind the coconut, curd, shallots, cumin seeds , green chillies together. Do not make a fine paste.

Add this to the boiled veggies and mix well.

Drizzle some coconut oil and put some curry leaves  on top. Serve hot with rice or roti. Avial is a good combination with dosas too.

Note: Instead of curd, tamarind or raw mango can be used.

According to taste more chillies can be added to make it spicy.
