Egg Avial




 Avial is a very common dish prepared in Kerala. This is usually made with a variety of vegetables that differs from one district to the other. It’s one of the  main dishes  prepared for festivals, marriages, birthdays and other occasions. Here, is a variation to the normal avial served.

Basic info about the recipe
Cuisine                              - South Indian
Serves                               - 2 people.
Ingredients:
1.         Onion                       -2 medium sized.
2.         Tomato                    -1large
3.         Drumsticks               -2 cut into finger sized portions
4.         Egg Omlette             -3 eggs cut into small pieces
5.         Coconut                    - half a coconut
6.         Fennel                       - ½ teaspoon
7.         Green chilli                 - 2 nos.
8.         Turmeric Powder       - ½ teaspoon     
9.         Red chilli powder       - ½ tsp
10.             Coconut oil                 - 2tbsp
11.             Shallots                         - 4-5 nos
12.             Dry red chilli                 - 2 nos
13.             Curry leaves                 - 1 bunch
14.             Garlic                            - 2small nos.
15.             Salt                                - to taste.

Preparation:- Pour oil in a pan. Put onions, tomato, green chillies and drumstick and sauté for a minute.

 Add turmeric powder and red chilli powder and cook well after adding required water.

 Make a paste of coconut and fennel and add to the curry.

 Let it cook for 3 minutes. 

Make omlette with eggs  adding a bit of salt. Add this to the curry. Add required salt and mix well. 

Let everything cook together for a minute.

 Finally, in a small pan add some oil. As soon as the oil heats, add shallots, garlic, dry red chillies, and curry leaves and fry for a minute. Pour this to the curry.

 Egg avial is now ready to serve.

Note:- Instead of drumsticks, you can try with raw bananas or carrot.
            Instead of egg omlette, you can use boiled eggs.
            Instead of tomato, you can use raw mango
