lentils. It is a very popular South
Indian breakfast item. Dosas are of different varieties.

Ingredients for
making dosa batter
1. Idli
rice - 2cups
2. Udad
dal(white) - 1cup
3. Fenugreek
seeds - ¼ tsp
4. Water - required for grinding
5. Salt - to taste
Method:- First of all soak idli rice and udad dal
separately for 5hrs. Fenugreek seeds can be added to udad dal.
After soaking,
grind them separately using sufficient water to make a smooth batter.
Mix both the
batter together in a large vessel. Let it ferment for 7-8hrs or overnite. After
fermentation, add salt to the batter and mix thoroughly. If required add
additional water to bring it to a pourable constistency.
Grease a non stick pan
with a little oil , drop a ladle of batter. Spread it around.
Pour a tsp of oil over it and let it roast. The colour of
the dosa should be redish-brown from the bottom. Now, flip to the other side
using a spatula. Let it cook for another 1 minute. If you cook for a longer time te dosas will
get more crispier.
Delicious dosas are ready to served with sambhar and
chutney.
