Idli




Idli is loved by people all over the world. It’s a  popular breakfast item of Kerala. Idli is a very healthy food as there is no usage of oil in it. It is steamed in a steamer by putting the batter onto a special vessel meant for making idlis.

Basic info about the recipe
Cuisine                                   - South Indian
Serves                                    - 4-5 people.

Ingredients for making idli batter
1.     Idli rice                            - 2cups
2.     Udad dal(white)                - 1cup
3.     Fenugreek seeds               - ¼ tsp
4.     Water                               - required for grinding
5.     Salt                                   - to taste

Method:- First of all soak idli rice and udad dal separately for 5hrs. Fenugreek seeds can be added to udad dal. 

After soaking, grind them separately using sufficient water to make a smooth batter.

 Mix both the batter together in a large vessel. Let it ferment for 7-8hrs or overnite. 

After fermentation, add salt to the batter and pour it to the vessel(idlithattu). The vessel should be filled with ¾ th batter only.

The vessel should be washed or greased with a little oil so that  idlis come out very easily. Steam the idlis for 8-10mts. After 10mts it can be taken out of the steamer and kept for cooling. After 5mts using a spoon take out the soft and delicious idlis.

Idlis go well with sambhar or chutney.
