Tomato chutney
Chutneys are great accompaniment with almost
all breakfast items and snacks. Different varieties of chutneys can be made.
Tomato chutney goes well with idli, dosa and uthapam.

Ingredients:
1.Tomato - 2 large

Shallots - 5 ns
3.
Ginger - 1 inch piece
4.
Dry red chillies - 2
5.
Oil - 4 tsp
6.
Curry leaves - 5-6
7.
Coriander Leaves - a small bunch
8.
Coconut grated/ dessicated - 2 tsp
9.
Asofoetida(hing) - a pinch
10.
Salt - to taste
Method: Fry shallots, tomato, ginger, red
chillies in oil.
Grind them with salt, coconut and some coriander leaves.
Transfer to a bowl.
Keep a pan and add oil. Fry curry leaves, coriander leaves and hing.
Tomato chutney is ready to be served.
Note: Mustard seeds can also be added while tempering.
