Sambhar




Sambhar is a very popular curry of South India. It is served with a variety of dishes like rice, idli, dosa, upma and vada.  Sambhar powder is readily available in the market, eventhough some people use only home-made powder. There are different brands of sambhar powder available which gives the same taste as of a home-made powder.

Basic info about the recipe
Cuisine                                                    - South Indian
Serves                                                     - 6-7 people.
Ingredients
            1.Assorted  vegetables  (ash guard,onion,tomato,drumstick,carrot,potato cut into cube size)                                      - 1 cup
            2.Sambhar dal(tuwar dal)           - 2cups
            3.Turmeric powder                    -1/2 tsp
            4. Red chilli powder(kashmiri)     - 1 tsp
            5. Asofoetida(hing)                     - a pinch
            6. Salt                                         - to taste
            7. Tamarind paste                        - 2 tsp
            8. Sambhar powder                      - 1 tbsp
            9. Coconut Oil                             - 2tsp
            10. Mustard seeds                        - 1 tsp
            11. Curry leaves                           - 10-15nos
            12. Coriander leaves                     - a small bunch
            13. Dry red chilli                           - 2 nos
            14. Green chillies                          - 2 nos

Preparation:- In a cooker, pressure cook the vegetables(excluding tomato) and daal adding turmeric powder, red chilli powder, green chillies, salt and hing

. After 1 whistle, reduce to low flame and then let it give 2 whistles. Turn off the cooker and wait for 10mts. 

Soak a goose-berry sized tamarind in half a cup of water for 10mts. Squeeze it and keep aside.

 After opening the cooker, add the tamarind pulp and tomato and let it cook for 5mts

 Add sambhar powder(powder should be soaked in water for 2-3mts to make a paste) and boil for 5mts.

 Keep a small pan and add oil. When the oil is hot add mustard seeds. when it splutters, add curry leaves, dry red chilli and coriander leaves and pour it to the sambhar. 

Delicious sambhar is now ready to be served.
