Nei Payasam




Nei payasam

No meal in Kerala is complete without a payasam. It is made during festivals, marriages, birthdays and other  occasions. Nei Payasam is an important offering in Kerala temples.

Basic info about the recipe
Cuisine                                             - South Indian
Serves                                             - 4 people.

Ingredients:
1.   Raw rice                            - 1 cup
2.   Jaggery (melted)               - 2 cups
3.   Ghee                                  - 4 tsps
4.   Kismis                                - 10-15 nos
5.   Cashew nuts                     - 10 nos

Method: Cook the rice in a pressure cooker adding 2 cups of water.
2 whistles would be sufficient. Mash the rice.

Melt jaggery adding water in a pan.

Transfer the rice to a pan and add a spoon of ghee and cook again for 5 mts.

Add melted jaggery and stir continuously. Add ghee in intervals. Cook for 10 mts in low flame.

Once the payasam leaves the side of the pan, turn off the heat.

Add 1 tsp  ghee in a pan and fry raisins and cashews and pour over the payasam.

Nei payasam is now ready to be served.
