Mixed Vegetable




Mixed Vegetable

As the name suggests it is a combination of different colourful veggies  blend with some spices. It is a much demanded dish in restaurants. It can be had both with rice and rotis.

Basic info about the recipe
Cuisine                                                                       - North Indian
Serves                                                                        - 3 people

Ingredients:
1.   Potato, green peas, carrots                  - 2 cups
Cauliflower, capsicum ,
 Mushrooms, French beans.
2.   Onion                                                     - 1 large
3.   Tomato                                                  - 1 large
4.   Ginger-garlic paste                               - 1 tsp
5.   Turmeric powder                                  - ½ tsp
6.   Red chilli powder                                  - ½ tsp
7.   Coriander powder                                 - 1 tsp
8.   Veg masala                                           - 1 tsp
9.   Fennel powder                                      - 1 tsp
10.           Kasoori methi                                  - 1 tsp
11.           Coriander leaves                            - 1 small bunch
12.           Oil                                                    - 2-3 tsps
13.           Cumin seeds                                  - ½ tsp

Method:  Cut veg into cubes or juliennes.( mixed veg packets are available in the market also)

 Heat oil in a pan and splutter cumin seeds.

Add ginger-garlic paste and fry.

Add onions and tomato and fry till golden brown.

Add all the powders and kasoori methi and stir fry.

Add the veggies and mix everything together. Close the lid of the pan adding some water. Let it cook for 15 mts.

Add coriander leaves and serve hot.
