Carrot- Beetroot fry




Carrot- beetroot  fry (mezhukkupuratti)

This sabji is rich in vitamins. Can be served with roti or rice.
                
Basic info about the recipe

Cuisine                         - Kerala
Serves                          - 2 people

Ingredients:
1.   Carrots                               - 5 medium
2.   Beetroot                             - 1 no.
3.   Onion                                 -1 large
4.   Turmeric powder              - ½ tsp
5.   Pepper powder                 - 1 tsp
6.   Salt                                     - to taste
7.   Curry leaves                     - 6-7 nos
8.   Coconut oil                        - 2 tsp
9.   Mustard seeds                  - 1 tsp

Method: Cut carrots and beetroot to small cube sized portions.

Heat oil in a pan and splutter mustard seeds. Add curry leaves and onion. Fry till golden brown. Add turmeric, salt and pepper powder. Stir well.

Add carrots and beets and allow to cook adding sufficient water. Cover with a lid for 15-20 mts.

Take out the lid, stir well to ensure there is no water inside. Carrot – beetroot fry is ready  to be served.
