Swathy




Swathy

It is a simple Sri Lankan dish which I learnt from my mother who is a Sri Lankan by birth. Swathy is a very delicious dish made with coconut milk. It can be served with idiappam, dosa and Idli.

Basic info about the recipe
Cuisine                                             - Sri Lankan
Serves                                             - 2-3 people

Ingredients
1.   Onion                          - 1 medium
2.   Tomato                       - 2 medium
3.   Turmeric powder       - 1 tsp
4.   Salt                             - to taste
5.   Coconut  milk             - 1 cup(thick)
6.   Green chillies             - 2-3 nos
7.   Curry leaves               - 5-6 nos
8.   Coconut oil                 - 1 tsp
9.   Coriander powder      - 1 tsp
10.           Curry masala        - ½ tsp.

Method: Boil onion, tomatoes and green chillies adding turmeric,coriander, curry powder, salt and water.  Mash the tomatoes  using a spoon to make it thick.

Pour coconut milk to it and bring to a boil stirring continuously.

 Switch off the gas. Put curry leaves and oil on top and serve hot.
